So, chef Roy has been at it again - getting creative with his ideas around how to use the great produce from our local suppliers and adding that extra flavour twist to make it our own.
This time is is the humble slice of bacon that he has turned his attention to. Wares in Torrington provided the pork loin and Roy has then home cured it, steeping it in Exmoor Beast ale (www.exmoorales.co.uk) and black treacle to add a flavour layer that you won't find anywhere else!
The dark and nutty Exmoor Beast comes through alongside the sweet and sour notes of the treacle. The two are a match made in heaven!
To make the most of the flavours, Roy has sliced it into steaks, which he then simply grills. Served up with two sides of your choice, the bacon steaks are now available on the menu.
Watch this space for more updates on Roy's ideas coming to life - he is perfecting homemade corned beef at the moment as well, which we are all enjoying taste-testing. Once complete, we will be adding corned beef hash to the menu. We are also working on selling these and our smoked meats packaged and ready to finish off and enjoy at home. Just a few finishing touches required to get this organised - we will let you know as soon as they're available and how you can get your hands on some.
